My energy levels have felt very low today. Perhaps I had one too many glasses of wine last night?
I woke up early so that I could do Adoring Husband's work for him while he's away at training and then I had a big breakfast of bacon, eggs, tomato, onion and avocado, attempting to gain some energy, which only lasted til lunch time and then I simply needed to nap.
I napped comfortably for almost 2 hours. Five minutes after I woke up I received a phone call from my happy little Chicklet who told me all about her adventure at Aussie World a couple of days ago. They were the only family there so Chicklet had all the rides to herself! I love listening to her talk .. she hardly takes a breath sometimes .. other times she forgets what she started to tell me and loses track lol. So precious.
Finally, I made myself a delicious and healthy dinner tonight. Zucchini pasta with avocado, lemon & basil sauce and crispy skinned salmon.
It was delicious, but I couldn't eat all of the salmon.
It's now 10pm and I'm off to bed. I have a big day tomorrow attending the 'Wellness Day' in Hervey Bay.

I'm lazy and selfish and spend too much time on the internet. I love to be creative with photography and jewellery and sketching with pencil and pastels. I'm happier now than I have ever been and I love everything about my life ... where I live, my home, my fantastic grown up children, my lifestyle, my friends, my dogs and last but not least my wonderful adoring husband. Life is good!

Three major events occurred for me last year (2010), all in the space of about 2 weeks. I turned 50. The following day I got married. Two weeks later, my oldest daughter became pregnant with her first child and my first grandchild.
Most middle-aged people will tell you that in their minds, they still feel 20 something. It's the same for me.
Wasn't it only yesterday that I was planning a night out with guys from the surf club? That gorgeous new perm. Flaired, cuffed denims and the red t-shirt with the off-the-shoulder frill. Corked platform wedgies. **sigh**
Suddenly I'm looking in the mirror and wondering how 30 years can flash by so damned quickly!
So here I am in cyberspace, sharing my genuine shock and horror with anyone who'll listen and maybe I'll even meet some other over 50s who find themselves in the same predicament!

Beef Vindaloo in the slow cooker for dinner tonight. I've never made it before, nor have I ordered it in a restaurant, but I do know that Number One Son likes it.
Adoring Husband seemed to enjoy it and ate a huge bowl of it with a side of papadums. I'm not sure how I feel about it. I think the flavour is a little strong for my liking and I don't think I'll make it again .. unless Number One Son comes to visit.
Yay for the footy season! Tonight's first game is between my team, the Broncos and last year's Grand Final Champions, the Rabbitohs. Almost at half time and the Rabbitohs are winning 8-2. Football season has been a long time coming!
I didn't get much study done today, even after my early night last night. I seem to have hit a wall and I need to figure out how to climb over it! I'll have a long weekend to focus while AH is on some training, so let's see how I go with that.
AH picked up our FROG box today which was full of celery, chard, silverbeet, spinach, kale, lettuce, onions, tomatoes, carrots, beetroot, cucumber, zucchini, plums and grapes. What a haul!
So the fridge is chockers right now! I need to check out some paleo recipes for the abundant green leafy vegetables that I have. All of my old recipes have cheeses and pastries in them, which aren't paleo.
I'm certain that 'Pinterest' will provide me with some ideas. I do love 'Pinterest' for recipes because I can ALWAYS find just want I'm looking for when I do a search.
So as I sit here eating organic purple seedless grapes watching the footy, I bid you farewell.

My/Our Story
Mid last year my husband become unwell and was sent off to see various specialists who sent him for numerous tests. The results were unclear, but that didn't stop them (Drs) from stocking him up on all types of medications. One specialist told him he may have to remove a piece of his large intestine. That was it for me, I decided that there had to be a better way. So I started researching, I came across the word "Paleo" and read everything I could find on Paleo. Everything I read just made sense. I found Chef Pete Evans face book page and purchased his book 'Family Food'. We ate 80% Paleo as we patiently awaited The Paleo Way 10 week Program to start. Since starting Paleo I have disposed of 16kgs and my husband 15Kgs. Little did I know that the Paleo way would not only change my husband's life but mine also. I have struggled with digestive issues my whole adult life and was living in constant pain, I had just accepted this as being part of my (normal) life. WELL I could shout from the roof top .. its not a normal way of life! My pain is nearly non existent now, I no longer take any medications for my stomach or my sinus (which I have had for years). My husband and I are also enjoying clearer skin, more energy, weight reduction, brighter eyes, we are less hungry and the list of improvements just keep coming, but best of all is we cant stop smiling. Tonight for dinner I dipped some boneless chicken thighs in egg and then coated them with a mixture of almond meal, LSA, sesame seeds, chilli powder, onion powder, salt and pepper. I lay them on a tray lined with baking paper which was brushed with coconut oil and baked them in the oven for 20 mins, then turned them over and baked for a further 15 mins.
They were scrumptious and on another tray in the oven I roasted sweet potato, beetroot, onion and zucchini and then I placed 2 large flat mushrooms on the tray with chopped garlic and butter in their centres. I drizzled some balsamic vinegar over the vegetables after I served them up and added a little container of my sriracha sauce to dip the chicken into.
It was GOOD!!

I got some more study done. I didn't enjoy it at all today! I struggled and was easily distracted, but I didn't give up completely, so I feel like I achieved something .. not a lot, but enough.
I was also, strangely enough, craving coffee!! Almost all day!! Very weird. Needless to say, I did not cave to my crave :) tempting though it was.
Perhaps an early night is on the cards. My brain will function better after a solid night's sleep. Last night, I stayed up til midnight watching Grey's Anatomy .. when will I learn???

Love my girls
Yes, I do love my daughters very much. They make me so proud and are both more wonderful than I ever imagined they would be.
But, I'm talking about my other girls.
My Tuesday morning tea girls. My Friday night at the club girls. My once a month barbecue at the park girls. My every so often at the movies girls.
Today we went to the movies and saw "The Second Best Exotic Marigold Hotel".
We loved it so much!!
Apparently, it got very bad ratings from the critics ... like 2 stars out of 5. We can't figure out why.
I think it was as good as, if not better, than the original.
All of the original cast were back with a couple of extras .. including the very charismatic Richard Gere.
The movie was funny, moving, dramatic, uplifting, warm and reflective.
We thoroughly enjoyed it and highly recommend it to anyone out there considering going to the cinema to watch it .. definitely worth seeing on the big screen, even if only for the glorious colours, scenery and energy that flows from the screen to the audience.
Just a couple of hours after we arrived home, we all gathered again at the Lion's Park for our monthly barbecue. There were about 17 of us there this evening. The weather was mild. The mood was happy and friendly. The variety of food was wonderful and delicious. We all had a great time.
I love my friends. You are all awesome!! You know who you are xxx

I'm a studying cook.
I sat down to study at about 9.30am but my brain just couldn't focus, so I went to the kitchen and cooked up a big feed of bacon, eggs, tomato, onions and avocado. That did the trick.
I studied til lunch time, when Adoring Husband arrived home from the SES, so I threw some beef sausages in the oven and while they cooked I chopped up a bowl full of salsa with tomato, capsicum, onion, avocado, cucumber and pear. A pinch of salt and pepper and a squeeze of lime juice to finish it off.
I continued studying til 4.30pm and then it was Chilli Mince with vegetable cakes, which were so delicious!
For the veggie cakes, I riced half a cauliflower, grated 2 cups of sweet potato, finely diced an onion, chopped one bacon rasher, sprinkles of paprika, cumin, chilli powder, turmeric, salt and pepper, 1/4 cup chick pea flour, a handful of chopped fresh flat leaf parsley, a good splash of coconut oil and 3 eggs. I used egg rings to mould them into shape on a large flat tray lined with baking paper brushed with coconut oil, and cooked them in the oven for 40 minutes.
I had two servings of both the chilli mince and the veggie cakes! The servings were only the size of a bread and butter plate, but I couldn't resist. There are heaps left over, so I'll serve them with guacamole tomorrow. Yum.
Tomorrow morning I'm off to the movies with the girls. It will be a nice break from my studies. A bit of light relief. I'm looking forward to it.

I Think You Know ..
It's only 4 minutes long, so worth a look to educate yourself a little.

Meanwhile, yesterday was my final chance to create a photo for the flickr challenge 'Nostalgia'. So, as the sun was setting, I gathered as much stuff as I could find in the house and shed, that was old, or could be considered nostalgic.
It took me two hours to finally come up with this...
It's pretty amazing how much 'old' stuff you can find in your own home! The camera is a Raven from the 1940s. The canister of film would be from around 1950s and Ginger Rogers/Fred Astaire were big in the 1930s and 1940s.
I did a photo quite similar to this for my exhibit a couple of years ago.
It was nice to play with the camera for a while. I miss my photography. Studies have taken over my precious time. I might have to take a few days between semesters and get out and about with the camera for some fun!
Adoring Husband arrived home safe n sound after his big chainsaw course .. although the heavy physical work in the heat, has taken it's toll and his body (mainly his legs and hands) has been cramping up so badly that he had to stop a few times on his way home.
A hot shower followed my some magnesium oil massaged into his legs. A hearty meal full of good himalayan salt (for it's minerals) and plenty of spices, green vegetables and good fats, then topped off with a bottle of water in which a hefty swig of apple cider vinegar was diluted.
*[Apple cider vinegar is fermented juice from crushed apples. Like apple juice, it contains some pectin; vitamins B1, B2, and B6; biotin; folic acid; niacin; pantothenic acid; and vitamin C. It also contains small amounts of the minerals sodium, phosphorous, potassium, calcium, iron, and magnesium. Apple cider vinegar is used alone or with honey for weak bones (osteoporoses), weight loss, leg cramps and pain, upset stomach, sore throats, sinus problems, high blood pressure, arthritis, to help rid the body of toxins, stimulate thinking, slow the ageing process, regulate blood pressure, reduce cholesterol, and fight infection.]*
It will now be interesting to see if he sleeps through the night without cramping up.
It's after 11pm, so it's time for me to sleep. Tomorrow (2nd March) will be the 36th anniversary of my first son's (Jamie's) death. Thank you Grannymus for your message of love today xox.

Tales of Changing Lifestyles
Gaynor's story ...
All stories should start at the beginning. Mine started as a small child, who was consoled with sugar and celebrated with sugar. My mother had the sweetest tooth of anyone I knew, my father on the other hand, found eating a chore. He didn’t mind a baked dinner, but would be just as happy with a poached egg on toast, which was probably lucky, as mum wasn’t a good cook. Her words, not mine.
Soft drink was my drink of choice, and when, at the age of 20 I thought it more healthy to drink Tab (the only diet drink I knew of in the 60s), instead of Coke. I drank it by the gallon. I once drank 13 bottles in one afternoon, and when diet coke replaced it I then converted.
Now, my eldest daughter lives with us and is a very good cook. She too had carried excess weight, but had taken herself in hand by first giving up sugar and soft drink before she found out about the Paleo way.
We sat one night chatting and she told me how much better she felt since following the Paleo Way of eating, which she had started while we were away on holidays. She mentioned Chef Pete Evans and I commented that he had never looked better, energised and lean. She told me he was on facebook, and encouraging people to follow his example doing Paleo. When she told me more, my immediate thought was “Oh I can’t give up carbs”’ I will have a HYPO. Well she said, “You can still eat carbs naturally, without eating 4 or 6 slices of bread a day, Mum”
Mmmmm, well I will give it a go, but I do have some reservations because of the diabetes. I was on 3 tablets a day, and thought I am going to have to be really sensible. The first hint of a HYPO and that’s it, NO MORE.
After 2 weeks, I felt more energised and alive. I was sleeping better, noticed I didn’t have any aches or pains, and when I did my BGL, which had been usually about 8 or 9 on waking, was now late 4’s or early 5’s. I was honestly dumfounded. How could I be eating this delicious food with all the things in it that I had cut out years ago, because we were told fat free, light etc.
As Christmas approached I convinced myself that a piece of Christmas cake wouldn’t hurt me. I cut the tiniest piece that would be an insult to a visitor. I didn’t enjoy it like I thought I would. When I popped the one chocolate I promised myself, into my mouth, I had to run to the bathroom for tissue. It was so sweet I thought I would be sick.
I am now 5 months along, feeling energised, healthy, perfect blood pressure readings, great BGLs at all times of the day, no arthritic pain. I can move up stairs in a fast normal way, rather than bringing the second foot up to the first at each step like I had been doing and the bonus to all this is 15 kilos of weight gone. Compliments as to how good I look and how well.
Yes, losing weight has given me a few more wrinkles, but I earned every one of them. For me, life didn’t start at 40, it started at 63 when I was introduced to the Paleo way. The bonus is the weight loss, but it comes second to the healthy way I feel.
I am grateful to my daughter and grateful to Pete for the encouragement he gives on his posts.
As the man who sells tea says “Try it you might like it, but you sure won’t be disappointed”.
To those who want to try it and have many medical issues, like I did, do it under supervision. Do your research, get your medicos to work with you, start off easy if you must, but start, don’t put it off, it is all natural.
I want to shout Paleo from the roof tops. Good luck and clean eating the Paleo way.

When I married, my husband was heavily involved with motor sports, so the netball, basketball, Vigaro ( a game like cricket) and swimming was replaced with hill climbs and short circuits, along with drag racing and gymkhanas. All sitting behind the wheel of a car.
After the first year of marriage, I had put on 20 Kgs. How did that happen? I thought it must be contentment. I did lose the 20 kgs when I wanted to fall pregnant, and did so by attending a weight loss program, and became a life member. Attending after each baby, only for it to go straight back on.
After 5 children, I had become a yo yo dieter. Going back to the weight loss program, then trying another where I did my dough, because I couldn’t come at the food, banana diets, soup diets and what not. I was overweight and unhappy. Still consoling and celebrating with food. I considered the family ate well, fresh fruit in children’s lunches, 3 or 4 vegies in the evening meal, but the portions were what a lumberjack could polish off.
Even at my age of 30, when my mum was diagnosed at 60 with diabetes it never occurred to me I was heading down the same track. By 40 I had ballooned to 80 kgs. If I mentioned weight, friends would kindly say you never weigh that much? You carry it so well. Maybe, but it was killing my knees.
By 50 I now weighed 85 kgs and was diagnosed as pre diabetic, severe arthritis, very little energy, and high blood pressure, but still I kept those lollies in the cupboard for the after dinner treats.
Mum also had come to live with us, and while I cooked appropriate meals for her diabetic requirements, I would disappear into my bedroom to gobble down 3 or 4 fantails and copious quantities of soft drink.

Then my husband’s aunt came to live with us. Heavens, I was now running a nursing home. The sweets became my consolation, just as they had been as a child. Alzheimer’s, diabetes, tablets, cancer, when would it stop? Gaynor, have another chocolate, oh while you are there, have another 2, to only then feel guilty for having done so. I was on a merry go round and couldn’t get off.
Even after these dear souls departed this earth, I still continued, I was now 89.6 kgs. I was 156cm, or 5 ft 1 ¾ inches. My husband jokingly referred to me once as a golf ball with legs. I was bloated and puffy, couldn’t manage a flight of stairs, felt generally unwell, lethargic with very little motivation. There were numerous health problems, including diabetes, high blood pressure, and others I won’t go into except to say I had myself dead and buried with one in particular.
Now, my eldest daughter lives with us and is a very good cook. She too had carried excess weight, but had taken herself in hand by first giving up sugar and soft drink before she found out about the Paleo way.
We sat one night chatting and she told me how much better she felt since following the Paleo Way of eating, which she had started while we were away on holidays. She mentioned Chef Pete Evans and I commented that he had never looked better, energised and lean. She told me he was on facebook, and encouraging people to follow his example doing Paleo. When she told me more, my immediate thought was “Oh I can’t give up carbs”’ I will have a HYPO. Well she said, “You can still eat carbs naturally, without eating 4 or 6 slices of bread a day, Mum”
Mmmmm, well I will give it a go, but I do have some reservations because of the diabetes. I was on 3 tablets a day, and thought I am going to have to be really sensible. The first hint of a HYPO and that’s it, NO MORE.
Well, the next morning, I was served Paleo pancakes with 100% maple syrup, mango and strawberries. No way, how could this be a better way of eating? Chicken salad for lunch, and a curry with of all things, cauliflower rice. Goodness had I died and gone to heaven? I did my BGL and even after 24 hours there was a very slight reduction.
The next day went well, followed by the next and the next. I was having a few nuts at morning and afternoon tea, but looking back, this was a security blanket, to make sure BGLs didn’t get too low.
After 2 weeks, I felt more energised and alive. I was sleeping better, noticed I didn’t have any aches or pains, and when I did my BGL, which had been usually about 8 or 9 on waking, was now late 4’s or early 5’s. I was honestly dumfounded. How could I be eating this delicious food with all the things in it that I had cut out years ago, because we were told fat free, light etc.
This was after 2 weeks, and when I got on the scales, I had lost 3 kgs. WHAT?
So then I wanted to learn more. I need some more recipes. I want to feel the way I do for the rest of my life. At the end of that 2 weeks, the thing that impressed me most, wasn’t the weight loss, or even how good I felt. The biggest thing was NO CRAVINGS. I hadn’t even thought about sweets.
After 6 weeks, I went to my diabetic educator, my BGL was in the sevens, which didn’t surprise me as it is a 12 week average. 6 weeks not on Paleo, and 6 weeks on, but according to her scales I had lost 4 ½ kilos. She was pleased and said I think we finally have you on the right track. I had not eaten any grainy bread that had upset my stomach for the past 2 years. I told her I was eating the Paleo way and she suggested I still keep a “watchful eye on the BGLs to be sure”.
As Christmas approached I convinced myself that a piece of Christmas cake wouldn’t hurt me. I cut the tiniest piece that would be an insult to a visitor. I didn’t enjoy it like I thought I would. When I popped the one chocolate I promised myself, into my mouth, I had to run to the bathroom for tissue. It was so sweet I thought I would be sick.
After 2 months, I was charging out of bed at 6 am after going to bed at 11.30pm. My energy levels were what I remembered as a teenager. My BGL was now excellent, compared to what they had been, and my diabetic educator suggested to my GP that he might consider removing one tablet. The high blood pressure I had since I was 43 was now a healthy 120/80. I was chuffed.
Every time I saw the post Chef Peter Evans put up, I commented. I wanted everybody to have what I was having. I wanted, and felt like I belonged to the tribe. When friends asked was I on a diet, I commented “NO just eating the Paleo Way” Some were interested, others told me there was no way they could eat that way. “I like my wine, beer, cakes etc too much” they would say. My comment was “I like my life too much” I am sticking with it.
I am now 5 months along, feeling energised, healthy, perfect blood pressure readings, great BGLs at all times of the day, no arthritic pain. I can move up stairs in a fast normal way, rather than bringing the second foot up to the first at each step like I had been doing and the bonus to all this is 15 kilos of weight gone. Compliments as to how good I look and how well.
I now only take 1 diabetic tablet and 1 blood pressure tablet. I have asked my GP to see what he can do to reduce them. My dearest and best friend gave the best compliment when she told me “Oh you have your little face back” Well, let me tell you, it isn’t only my little face I got back, I never thought I would enjoy such a healthy life again.
Yes, losing weight has given me a few more wrinkles, but I earned every one of them. For me, life didn’t start at 40, it started at 63 when I was introduced to the Paleo way. The bonus is the weight loss, but it comes second to the healthy way I feel.
I am grateful to my daughter and grateful to Pete for the encouragement he gives on his posts.
As the man who sells tea says “Try it you might like it, but you sure won’t be disappointed”.
To the sceptics I say, don’t write or comment until you have given it a two week try.
To those who want to try it and have many medical issues, like I did, do it under supervision. Do your research, get your medicos to work with you, start off easy if you must, but start, don’t put it off, it is all natural.
I want to shout Paleo from the roof tops. Good luck and clean eating the Paleo way.

I mentioned a few weeks ago that I wanted to start sharing stories from people who had changed their eating to Paleo. All of the stories are this long, because there is so much detail about their health conditions prior to changing the way they eat.
So I should probably only share one story every couple of weeks.
Gaynor shared her 'before' and 'after' photos on Pete Evans' fb page, but I decided that I wouldn't post her photos here. Take it from me .. a complete transformation!
There are literally hundreds of stories like this one and so far, I haven't found anyone (who has actually tried it) criticising it. Plenty of people have NOT tried it because they believe it is to restricting or too expensive. Most just don't believe that they can give up sugar or carbs.
I love the Paleo way of eating and I love the way I feel. I can't imagine ever going back. I know that in social situations, I can almost always find something 'close enough' and if not, I'm never so hungry that going without will be a problem. As Gaynor said .. no cravings! There was never a time in my life where I didn't crave either savoury or sweet.
Before I developed my thyroid condition, I could eat bags and bags of potato chips day in and day out. After the thyroid condition, my body craved sugar .. lollies, ice cream, sugary and creamy pastries from the bakery, blocks of chocolate .. anything. But no more. No cravings. I don't even crave my beloved coffee anymore.
I'm off to do some study. My 'Study Smart' website has shut down for upgrades this weekend, so I printed as much information as I could, so that I can still do some of the study and the paperwork also lists the pages in my text book that I can read (so boring!). I hope the site doesn't have any glitches by the time it comes back up.

Mixed Efforts
There was study.
Alkane Nomenclature.
Cycloalkanes.
Polymerization.
Halogenation.
Thiols and Thiolethers.
I know right?!
I learnt a lot of rules about compounds, isomers, molecular formulas, substituent groups, reactions of alkenes blah blah blah blah.
At the end of a couple of hours, all the rules ran into each other (in my head) so I'm going to have to go over and over and over them to make sure I have them clearly understood. Ugh.
Youtube might have to be my saviour again on this one.
There was cooking.
I made these tonight ...
Delicious as they are, they melt very quickly, so you have to eat them fast. I filled them with chopped cashews, pepitas, sunflower seeds and pistachios. I think it would be nice to add raisins or cranberries to the mix.
Tomorrow morning I hope to make some more energy balls for Adoring Husband to take away with him on his training course this weekend.
I made another two weeks worth of dog food today with kale, silverbeet, celery, pumpkin, turnips, eggs with the shell, coconut oil, chicken mince, beef mince and spirulina. All raw except for the pumpkin.
Dinner for AH was stuffed flat mushrooms and stuffed capsicum.
There was cleaning .. half-hearted.
There was fighting with the printer that didn't want to print with any photo paper except it's own brand. That's annoying!
It looks like I might get another early night tonight! Woot .. Woot!

Day of Rest
No study today.
It was our monthly ladies luncheon and we all caught the courtesy bus to Torbanlea, just a 15 minute ride away.
The Torbanlea Pub has a nice atmosphere and is very quiet during the day. It's a 'no frills' kind of place and of the few times I've been there, only once have I been disappointed.
They, apparently, are under new management since the last time I was there and unfortunately, the bistro doesn't cater to coeliacs, so my only option (due to my gluten and fish allergy) for lunch was steak and salad. Everything else was crumbed or battered, even the chips.
The steak was tough and luckily I still have my own teeth with which to chew, so I powered my way through about half of it. That aside, I had a nice time with the other ladies who attended.
I really wasn't that hungry anyway .. that's another of the great things about Paleo eating. I rarely feel hungry and there are no cravings. My mother once told me "we eat to live, we don't live to eat!" I understand that now, more than ever. I could easily be satisfied eating just once a day.
Another confession .. I shared 2 bottles of wine with Mardi and Lady Lynn .. with hindsight .. that made up for the crappy steak!
Here we are at the end of February and our flickr photography challenge this month is 'Nostalgia'. I still haven't come up with a photo and I have no ideas.
I thought about taking a photo of a vintage camera next to some old black & white photos and a very old album, but I went into flickr to look at what some of the others had done and there is already a photo of someone browsing through some old black & white photos, so that idea for me, is out the window.
I have three days to come up with something .. so if you have any ideas, please feel free to share! I have until midnight 28th Feb to submit.
So I'll leave it with you then!

Missed Sunset
By the time I got my camera gear organised and ran out the front door, the sunset was almost gone.
I wish I'd been able to get down to the river for a better shot.
More study today. As much as I want to list all the stupid words that I learned today, I am going to spare you the torture, and I'm not even going to share the structured formula for Propane ... yeah, I can tell that you're disappointed about that.
I must say that my brain is pretty relaxed and is absorbing information well. Feeling ok about Chemistry right now. I hope it lasts.
My hopes for an early night last night kind of fell by the wayside when one of my favourite shows started the new series .. 'Parenthood'. I don't know why I didn't just record it. It started late at night and I stayed up til after midnight watching it!
Tonight, 'Grey's Anatomy' is on, but I AM recording it, so I'm off to bed now!

Delishioso
The recipe as promised ...
Apple Crunch/Crisp
Ingredients for the topping:
1/4 cup almond meal or almond flour
1/4 cup finely shredded coconut
3/4 cup chopped walnuts
3/4 cup chopped pecans
1/3 cup extra virgin coconut oil
3 T muscovado or rapidura sugar (the molasses flavour of these sugars really works in this topping)
1/2 t nutmeg
1/2 t all spice
big pinch of salt
6 Medium green apples.
1 t finely grated lemon zest
2 T lemon juice
1/2 t cinnamon
1/4 t cardamom
The nutty topping is lovely and crunchy and the apple mixture is still quite crisp. This dessert is not too sweet and is very healthy.
Tonight I made a roast chicken by mixing 5 minced garlic cloves with butter and chopped parsley and then filling the space between the skin and the meat over the breast with it. I chopped up half a lemon into 4 pieces and put them inside the chicken, then baked it in the oven for 90 mins.
I poured the juices that oozed out of the chicken, into a container, then I browned some tapioca flour in the bottom of the pan and then added the juices back into the pan. So flavourful and went beautifully with the chicken and the roasted turnips, beetroot, sweet potato, red capsicum and onion.
Food glorious food!
Today I've been studying about solutions, solvents, molarity, solids/liquids/gas, intermolecular forces, colloids, osmosis, the Octet rules, organic structure, covalent and ionic bonds blah blah blah blah blah.
My lecturer sounds exactly like Julia Gillard, only she has a very sad sense of humour that I really don't feel amused by and I find myself rolling my eyes often during the lectures. Sometimes I wonder if she thinks we are all 5 years old because she can be quite patronising and uses a childlike voice to explain some things.
Anyway, I do know that when I complete my studies, I will be giving her and the institute some much needed feedback about some of her techniques, especially the amount of time she wastes at the beginning of her lectures trying to get microphones working for everybody present online.
When the lectures are 'live', it's understandable, but when she puts the recorded lectures up for us to download and listen to, she should be deleting those parts. It drives me bonkers.
The weather is stinking hot and humid, so I've been locking myself inside the house with the air con steady on 25C and the column fan blowing directly on me. Very comfortable.
I've enjoyed a couple of early nights (by early, I mean BEFORE 11pm) and I think I'd like to make it a habit. Let's see how I go.

- Bake for 40 minutes then turn up the heat to 220C and cook for a further 5 mins to brown the crisp, but don't let it burn.
- Remove from the oven and serve warm with coconut cream, or pure cream, or ice cream or even custard. Those of us on Paleo would go with coconut cream.

Sugary Surprises
Remember all the things we've been taught about fat for the last 40-50 yrs? Forget it.
Replace the word 'fat' with 'sugar' and you have the actual truth about what is good and what is bad.
Animal fats, butter, pure cream, avocado, macadamia and pecan nuts, coconut oil/milk/cream/butter .. all good for you and will help you lose weight and get healthy by improving your body's ability to absorb and use the nutrients in the good food that you consume.
Processed/polyunsaturated, canola/vegetable/sunflower/peanut/corn/soy oils are BAD, even though they have the healthy heart tick of approval (don't even get me started on the healthy heart tick!!)
When you cook with polyunsaturated vegetable oils (such as canola, sunflower, rice, peanut, corn, and soy oils), oxidised cholesterol is introduced into your system. As the oil is heated and mixed with oxygen, it goes rancid. Rancid oil is oxidised oil and should NOT be consumed—it leads directly to vascular disease.
Glucose is the form of energy we are designed to run on. Every cell in our body, every bacterium—and in fact, every living thing on the Earth—uses glucose for energy.
Your body metabolises fructose in a much different way than glucose. The entire burden of metabolising fructose falls on your liver.
This chemical imposter is responsible for your insulin resistance and weight gain.
Elevated blood pressure.
Elevated triglycerides and LDL.
Depletion of vitamins and minerals.

Back to Normal
It's all over.
Marcia has wreaked her havoc and then scuttled through the rest of the state causing widespread flooding and other damage.
We were let off lightly.
The strong winds didn't reach the expected 100kph, but even at 65kph the wind caused a roar that made for a very restless sleep and one of the psychotic dogs was completely freaked out and in the end I brought her into our bed, just so that I could get some sleep.
We didn't get much rain either. She skirted by us and dumped hundreds of mm of rain on the Sunny Coast and Brisvegas causing flash flooding and cutting off a lot of roads. The devastating effects will continue to be felt in the days to come as rivers reach their peak and flood cities like Gympie and Maryborough.
I rode my trike down to the river this morning, even though the winds were still quite strong and gusty, and sat with the boys for a while .. that is until I noticed the mini water spouts that were skipping along the water across the river.
That was my cue to leave. I knew that if one of them grew to a decent size and came in our direction, I would be messed up beyond repair, so I left the boys to tackle the ridiculous wind gusts and possible water spouts and I headed home to study.
While Adoring Husband spent the day SES-ing, I got some good study hours in.
I made a nice chicken curry for dinner tonight and now I'm watching one of my favourite movies "50 First Dates" with Adam Sandler and Drew Barrymore. I doubt that I'll see it out to the end because my restless night is catching up with me .. I need sleep.

Cyclonic
Cyclone Marcia has made her presence felt up north and created havoc, as well as horrific damage to homes and business and beaches.
We should be feeling her presence during the night and are expecting winds of up to 100 kph as well as heavy rains, so I'm off to bed. Hopefully, I will sleep through it .. or at least get some good sleep before she hits us.
Fingers crossed that she eases so much that we barely notice her presence!
Adoring Husband has been very busy with SES duties and is currently asleep in his recliner chair so I think I will wake him and we should hit the sack.

S&%t's getting real.
So the cyclone has progressed from a reasonably harmless category one, to a category 4 and predicted to reach the most severe level of category 5 before it hits land some time tomorrow morning. The whole process has taken 24 hours and this cyclone (Marcia) is going to effect all of the Queensland coast from Mackay south.
Unfortunately, for the people of St Lawrence, just north of Yeppoon, it is predicted that the cyclone will cross closest to them. The winds will reach 300kph and I can't even comprehend that kind of speed.
The most frightening part for us, is that we are south of the cyclone and that is where the worst rain and the strongest possibility of water spouts and tornados occurs.
So far, the weather has been reminiscent of cyclone Oswald, where we get quiet patches and then the wind picks up and we get heavy scuds of rain (horizontal), then it goes quiet again and the process repeats itself.
It makes me feel anxious. Very anxious.
I have the windows closed and the blinds pulled .. so that if there are any flying missiles, the blinds will stop the glass shattering through the house and hopefully slow down the missile as it enters the house.
My walk-in wardrobe is cleared out and I have my camera gear, fully charged phone and ipad in there with a couple of pillows. There is enough room in there for Adoring Husband, me and the three psychotic dogs. Oh I must put the torch in there before I go to bed!
I cooked up 2 kgs of chicken wings and made some chocolate seedy energy balls.
The best part of eating Paleo, is that when people 'panic buy', they buy all the bread, crackers and milk, and they leave all the fresh fruit and veg behind .. which will last longer than bread or milk if the power goes out .. so there was plenty for me to choose from!
Anyway, my little sister is in the path of the cyclone, even though she is 2 hours inland, she will be affected as Marcia crosses the coast and heads inland.
My brain/mind is erratic, so I will stop rattling on and sign off.
Hopefully, I will return tomorrow evening with our house and bodies still intact to tell you the story of our second cyclone experience.

Confession Time
Confession one ...
I am extremely stressed about the current weather warnings regarding the low pressure system heading in our direction, that at best, will bring strong winds and heavy rains, and at worst, will become a cyclone and bring more widespread damage.
I'm sure that if I had my blood pressure tested right now, it would be high!
Confession two ...
This morning, I decided that I needed something to help my stress levels.
I decided that my two options were 'wine' or 'coffee', neither of which (with hindsight) are the positive or healthy options that a health conscious person should be considering!! However ....
9am seemed to be a little early for 'wine', although I'm certain that it was 5pm somewhere in the world!! So as I stepped into the 'supermarket come cafe' where I usually buy my coffee, I saw that my favourite barista was on duty, so I ordered a coffee!!
As I ordered it, there were very audible gasps and oooohs and aaaahs and ummmmaahhhs from the staff, who all know that I am on this paleo program and this caused me to almost withdrew my order!!
But I didn't.
As the Queen Barista handed me my full, take away coffee cup, I felt my heart skip a beat and as I took my first mouthful, it was like welcoming an old friend as that familiar burst of flavour exploded in my mouth and washed over my dancing taste buds.
I called out to Queen Barista "Ahhhh, it's just as fabulous as I remember!!" The staff all laughed in unison.
I almost floated as I made my way outside and headed towards my trike, where I took my second mouthful. Hmmm, a seed of doubt.
By the third mouthful, it tasted like some kind of pasty chemical concoction that brought me no joy and then the 4th mouthful killed it for me.
I poured the rest down the sink when I got home and two hours later, I still have the after taste permeating through my head and I have to say that it is not pleasant.
How strange. This is NOT what I was expecting and now I am terribly disappointed. I guess that I'm not going to train my body to 'love' coffee again. That would be stupid. So it seems that coffee is now forever gone from my personal dietary requirements.
Who'da thunk??!!
Ah well, there is still wine. Oyster Bay, I will never desert you, but I also will never resort to drinking you at 9am, and you will also have to wait until my 10 week program is complete. I will commit to that ... unless the cyclone hits ... in which case, ALL BETS ARE OFF!!

Both are sugars, but when glucose passes through the liver, the organ decides whether it should be burnt now, stored for energy use later, or converted into triglycerides.

Procrastination or Necessity?
There is so much that needs to be done and I feel guilty sitting down to study when I know things are being neglected.
So it could be seen as procrastination, but today it was necessary to do some cooking to replenish stocks that have diminished in the fridge in the last couple of weeks.
I need to clean the bathroom tomorrow and by then, the guilt should ease enough for me to study with focus.
Some more of Mother Nature's wrath hit our area in the early hours of this morning.
An earthquake registering 5.2 on the Richter scale hit at 2am.
This earthquake woke everybody I know, including Adoring Husband, who said that it sounded just like the tornado with a roaring sound that got louder and louder.
SEB's bird cage was moved almost 2 foot from it's usual resting place.
All three of the psychotic dogs (two of them sleep in our room) barked at the disturbance.
Others talked of rattling cupboard doors, the houses on stumps vibrated more than the new houses and some lighter items vibrated right off shelves. Some places lost power for an hour and others found cracked concrete and cracks in walls.
I slept through the whole thing!!
I vaguely remember feeling the bed shake and dismissing it thinking that Adoring Husband had woken up (he has Parkinsons and regularly wakes during the night causing the bed to vibrate) and I also heard the psychotic dog in the laundry barking, but ignored her hoping that she would soon stop.
But that is the extent of my earthquake experience and I am grateful for that.
AH was surprised by how it caused him to relive the fear of the tornado event, so I'm glad that I slept through it.
Apparently we live on a fault line. Who knew?! Not very happy about THAT!
Anyway, we survived intact, and hopefully that's the last of it!

As Promised
Well, here are 'some' photos from my time in Brisvegas.
I currently have a big batch of chicken broth simmering away in the slow cooker .. it's been going for about 12 hours and I'll probably leave it on for another 24 hours.
This is what I made for lunch today. Chilli, chicken and prawn meatballs crusted in sesame seeds with a sweet chilli dipping sauce. Unfortunately, my chillies weren't very strong so I'll remedy that for the next batch!
I ate so many of them at lunch time that I didn't even have dinner tonight.
I used 500g each of green prawns and chicken mince.
I processed the prawns until they were quite smooth, then added 2 T of chilled water and pulsed it until the mixture was quite sticky. I then added the chicken mince, 2 T fish sauce, finely chopped chilly, garlic and spring onions and pulsed until it was mixed well.
I coated my hands in oil so that the mixture wouldn't stick and made some small meatballs, which I rolled in sesame seeds and then flattened slightly. I shallow fried them in coconut oil and after they were cooked, sprinkled them with himalayan salt and cracked pepper.
I made a dipping sauce with apple cider vinegar, lemon juice, honey, chopped coriander, chilli and fish sauce. It needed more chilli.
Anyway, that's it from me. I'll try to get some more shots from my week away, up here soon, but I really need to focus on the studies, so I don't know when that will happen.

Done and Dusted
Party time is over.
My week of fun and frivolity is done and I have arrived home safe and sound.
Tomorrow it's back to the grind!
It was a great week but I'm happy to be home, and Adoring Husband, along with the three psychotic dogs, seemed happy to see me too.
Now I have a week of TV shows to catch up on (which Adoring Husband recorded for me) but I also have some intense study happening for the next 3 weeks, so I might just have to watch one show each day during my lunch break til I catch up.

Touristy
Today, I did the touristy thing and visited Brisbane City Hall.
I was there three months ago filling in time until our train departed, and we attended the Saturday morning markets. They are a bit 'up market' with beautiful hand crafted goods on offer at quite high prices and Adoring Husband purchased a beautiful ceramic bangle for me.
Today, Woman of Many Talents and I got there early, as suggested by a couple of the ladies in our group, only to discover that we had to wait 45 minutes for the exhibits to open and the tours to commence.
So we decided to go exploring on our own.
We found our way into the domed hall.
The Main Auditorium and the Father Henry Willis Organ (located within the Main Auditorium) are key heritage features of iconic City Hall.
I took photos, which I will share with you after I get home.
Spectacular! We sat quietly taking in all of it's splendour and I recalled the time, more than 40 years ago, when I attended this auditorium as part of our school choir and actually stood on the stage in front of that amazing organ singing my heart out.
I must say that it did not look as big today, as it did back then when I was about 10 yrs old.
We decided to do a tour of the clock tower and luckily were in the first group for the morning. The tour is only 15 minutes long because they have to get you back down out of the tower before the bells ring .. which happens every 15 minutes.
The lift that takes you to the tower is an original lift from the 1930s and is operated manually with brass fittings and instruments and is surrounded by a fine mesh cage. It takes you almost to the top, but there are 28 steps to climb to reach the summit, where you have a 360 degree view of the city and can take photos (which I will also share with you when I return home).
The massive clock face and the five enormous bells, that combined, weigh some astronomical amount were a real treat to see. It was a fascinating tour and I'm so glad that I did it.
Next was an exhibit of photographs taken by an amateur photographer named Alfred Elliott and his historic collection of glass plate and film negatives was discovered in the early 1980s, stored in cigar boxes under a house in inner city Red Hill. Incredible photos of history and all I could think is that the world is so lucky to have we amateur photographers obsessing with our cameras and keeping a record of 'our' times in each generation.
My favourite part of the day was an exhibit of 'Costumes from the Golden Age of Hollywood'. There were stills of movies with the actor/actress wearing the costume and then the actual costume was on display for viewing.
Esther Williams swimming costumes, Yul Brynner's belt from 'The King and I', a June Allyson dress, Barbra Streisand's red velvet cloak from 'Funny Girl', Elizabeth Taylor's wig from 'Cleopatra', Gene Kelly's vest from 'Singing in the Rain', a Lucille Ball dress from 'The Long Long Trailer' and others from Fred Astaire, Marlon Brando, Julie Andrews, Judy Garland, Lana Turner and soooo many more.
The display triggered so many memories from my childhood as I remembered watching those movies and seeing those costumes so many years ago. I absolutely loved it and am not afraid to confess that at times, I felt quite emotional.
Unfortunately, we were not allowed to take photos of the display, so I can't share any of that with you.
Later, we walked to the casino where we planned on having lunch, but the options were not very good, so we returned to the Paleo Cafe where we ate yesterday and enjoyed a healthful and delicious meal, yet again.
This evening was canapes at the Marriott. We also enjoyed a few beverages and witnessed a domestic dispute, where the police were called. Since none of us knew the full details and only saw a brief volatile encounter between an older gentleman and a young man, we all made up our own stories about the circumstances surrounding the incident. It made for an interesting evening.
So our holiday is over and tomorrow we head home. I've had a very good time and am looking forward to going home, even though it means cramming for two exams over the next 3 weeks!

I was there three months ago filling in time until our train departed, and we attended the Saturday morning markets. They are a bit 'up market' with beautiful hand crafted goods on offer at quite high prices and Adoring Husband purchased a beautiful ceramic bangle for me.
Today, Woman of Many Talents and I got there early, as suggested by a couple of the ladies in our group, only to discover that we had to wait 45 minutes for the exhibits to open and the tours to commence.
So we decided to go exploring on our own.
We found our way into the domed hall.
The Main Auditorium and the Father Henry Willis Organ (located within the Main Auditorium) are key heritage features of iconic City Hall.
I took photos, which I will share with you after I get home.
Spectacular! We sat quietly taking in all of it's splendour and I recalled the time, more than 40 years ago, when I attended this auditorium as part of our school choir and actually stood on the stage in front of that amazing organ singing my heart out.
I must say that it did not look as big today, as it did back then when I was about 10 yrs old.
We decided to do a tour of the clock tower and luckily were in the first group for the morning. The tour is only 15 minutes long because they have to get you back down out of the tower before the bells ring .. which happens every 15 minutes.
The lift that takes you to the tower is an original lift from the 1930s and is operated manually with brass fittings and instruments and is surrounded by a fine mesh cage. It takes you almost to the top, but there are 28 steps to climb to reach the summit, where you have a 360 degree view of the city and can take photos (which I will also share with you when I return home).
The massive clock face and the five enormous bells, that combined, weigh some astronomical amount were a real treat to see. It was a fascinating tour and I'm so glad that I did it.
Next was an exhibit of photographs taken by an amateur photographer named Alfred Elliott and his historic collection of glass plate and film negatives was discovered in the early 1980s, stored in cigar boxes under a house in inner city Red Hill. Incredible photos of history and all I could think is that the world is so lucky to have we amateur photographers obsessing with our cameras and keeping a record of 'our' times in each generation.
My favourite part of the day was an exhibit of 'Costumes from the Golden Age of Hollywood'. There were stills of movies with the actor/actress wearing the costume and then the actual costume was on display for viewing.

Quickie
It's already after midnight, it's been a big day and I'm well and truly ready for bed, so here is a quick post with some pics taken with my phone this evening.
Woman of Many Talents and I spent the entire day walking and shopping.
We had breakfast at the Marriot at about 8am and left for our shopping day at about 9am. We shopped and walked til lunch when we stopped for 30 minutes to have lunch at the Paleo Cafe in town ...
... and then shopped and walked til 5pm.
At 6pm we left for dinner at the Marriot (which was delicious) and we were all back at the motel, in our pyjamas for drinks by 8pm.
We have an early start tomorrow with quite a lot planned for the day, so I am signing off and ready to hit the hay.

What happens ...
... with the Burrum Ladies, stays with the Burrum ladies.
Just want to say that the first night has been a lot of fun, and I have broken my Paleo program and I drank wine tonight.
The table was full of goodies, like cheese, cabanossi, gerkins, crackers, dips, chips and pates, but I didn't touch any of that.
Dinner was prawns, ham, chicken, salads and breads. I had prawns and salad.
So my only downfall has been the wine, but I planned this holiday before I planned the Paleo Program, so I am joining in with the ladies and wine will be on the table for me for the next 2 days.
I had a lovely morning tea with The Nikonian this morning even though she is struggling with the effects of cutting all the bad stuff from her diet with the Paleo Program, she still made the effort to come see me. I so appreciate her effort and am impressed with her resolve to take on this positive change for her health and I am excited to have another ally in this move towards a healthy lifestyle.

Meanwhile, it is almost midnight and while everybody else has crashed, I am lying here in bed writing this and feeling like I could take on the world.
I have been up since 6am, spent 3 hours with Chicklet, spent 2 hours with The Nikonian having a late breakfast and checking out some OPP shops, then a 2 hour train trip into Brisbane. We caught a taxi to the motel, then went for a 'good' walk to do some grocery shopping for our dinner tonight, carried a load of heavy bags home. Four hours of drinking, partying and gossiping ... and now bed.
I haven't, at any stage, felt tired or worn out and I really love this feeling!!
Before it hits midnight, I am turning out the light and plan to get some good sleep before a full day of walking, shopping and exploring tomorrow.
I have pics and hopefully will get to share some tomorrow night, depending on how the day pans out .. maybe you'll have to wait til I get home .. who knows?!

Pretend Birthday
Today was Chicklet's 'pretend' birthday, because I won't be here for the actual day.
We had a great day, starting off with the amazing birthday cake for breakfast no less! Even I broke my 10 week program momentarily to share some birthday cake with my girl.
That was followed by a wonderful day at Underwater World. She loves sea creatures more than dinosaurs at the moment, so this is one of her favourite places to be. I can understand why, because I love it too. It gives me energy and peace at the same time.
Next was a late lunch at Sizzlers where I had steak and lobster. It was better than my last few experiences at Sizzlers and it wasn't too busy or too loud, so it was a relaxing lunch for us all.
We ended the day with cake in the bath and five storybooks before she fell sound asleep in Mama's bed.
She handled the day very well and we all had a good time.
I'm off on the next leg of my week away from home tomorrow. Catching up with The Nikonian in the morning and then meeting Woman of Many Talents at the train station where we will catch a train into Roma Street Station and then on to meet the rest of the ladies for our few days of fun.
Can you believe that I powered through the whole day today without feeling the slightest bit tired or in need of a break. It's almost 11pm and I still feel like I could go for a couple more hours. I think this Paleo Way lifestyle has provided me with some stamina, the likes of which I haven't experienced in years. I like it!

Bozzy Wozzy Time
It's been full on in the Chicklet household with plenty of play time.
We've spent a LOT of time practising our drawings. This is me beside a talking crayon.
This is 'Art by Juniper and Bozzy Wozzy'. (A ghost's birthday party)
We've watched 'Finding Nemo' and 'A Bug's Life' and 'Alvin and the Chipmunks Squeakquel' on the laptop.
We've had long baths.
We've read about 25 books.
We've had picnics in bed.
We've played on the swing.
We've played 'catch'.
We've both started out in Bozzy Wozzy's bed for two nights but both times, only one of us stayed in Bozzy Wozzy's bed ... can you guess which one of us that was? Aha, yes, Mama cuddles are just too good to miss out on every night.
Never mind .. small steps.
I must say that my energy levels have been pretty good for this visit and I slept very well last night.
Tomorrow is Chicklet's 'pretend' birthday and we start the day with cake for breakfast, then a visit to 'Underwater World' and then somewhere for lunch. That should be enough to wear us all out!
So I'd best build up my energy again ready for the big day!
