Nice to see you!

Three major events occurred for me last year (2010), all in the space of about 2 weeks. I turned 50. The following day I got married. Two weeks later, my oldest daughter became pregnant with her first child and my first grandchild.

Most middle-aged people will tell you that in their minds, they still feel 20 something. It's the same for me.

Wasn't it only yesterday that I was planning a night out with guys from the surf club? That gorgeous new perm. Flaired, cuffed denims and the red t-shirt with the off-the-shoulder frill. Corked platform wedgies. **sigh**

Suddenly I'm looking in the mirror and wondering how 30 years can flash by so damned quickly!

So here I am in cyberspace, sharing my genuine shock and horror with anyone who'll listen and maybe I'll even meet some other over 50s who find themselves in the same predicament!

A Fast Ride

The trip on the train this morning seemed to fly by!

I ordered lunch on the train. A gluten free roast chicken with veg and a creamy mushroom sauce.

I've had the roast chicken twice before and really enjoyed it, so much that I felt quite excited to be having it for a third time.

That was before I chose the Paleo lifestyle.

I'd only eaten half of it when I began to feel bloated and uncomfortable, so I checked the ingredients list.

Well, that was an eye opener! So many additives and the mashed potato (the last two times the potato was baked) was powdered potato. Preservatives, flavours, numbers, whey powder, protein powder, salt, sugar .. you name it.

I felt quite uncomfortable for about 3 hours. So disappointing and a hard lesson learned.

Once your body becomes accustomed to only, fresh real food, as soon as you put something into it that ISN'T fresh or real, it really lets you know about it!

The man sitting in front of me ordered the roast lamb with veg and gravy. He spent the next 30 minutes belching uncontrollably! I don't mean burping, I mean full force belching that echoed throughout the carriage! He must have been incredibly uncomfortable.

Anyway, I shared a taxi from the station with another lady, who was travelling to the next suburb. She was very nice and we chatted for the 20 minute ride, which made it go fast too.

I've spent the afternoon playing with my little Chicklet and every so often she stops and looks at me and says "I love you Bozzy Wozzy" or "I've missed you Bozzy Wozzy".

Makes my heart melt.

No photos taken today, but I will make a concerted effort tomorrow.

It's raining as I write this and I think we may be in for some more for the next couple of hours...

Done and Dusted

Exams done and dusted! Yay!!

Had a couple of wines tonight at the club. Had a nice time.

Making a list in my head of everything that I have to pack to take away tomorrow.

Looking at the clock and thinking that I should get to bed.

Now that it's all over, my brain is mush and there are no words forming in my brain to transfer to this page.

Happy Friday

After tomorrow morning (Friday), when this exam hell is over, I am going to look forward to a wine or two tomorrow night .. not too many though, because I will have to pack my bags on Saturday morning and then travel on a train for over 2 hours.

Hangovers are not pleasant at the best of times, let alone on a train!

I'm looking forward to a couple of weeks study free, spending a few days with the Chicklet family, then a day with the girls going across the river for lunch at Woodgate and then the following day attending The Paleo Way cooking show in Bundaberg.

Such a lot to look forward to in the coming week!

In the midst of cramming today, I made Weiner Schnitzel for lunch, a double batch of Butter Chicken for dinner (leftovers in the freezer for AH while I'm away) and I currently have pork in the slow cooker to make Pulled Pork tomorrow, which will be for dinner tomorrow night and leftovers for AH's lunch the next day.

I hope to find time to make some energy balls, some of which I'll take with me down south.

So much to do, so little time!

Meanwhile, Cyclone Nathan is edging his way closer to my brother in Cooktown.


I worry about him, but I must say, I'd rather him be dealing with this weather event, in his laid back hippified kind of way, than me dealing with it in my stressed to the max, pathetic old lady kind of way!

Two More Sleeps

I've been cramming all day, so of course there is no news.

I was going to share some links to some short youtube videos about sugar, gluten, health and paleo but it's almost 11pm and I couldn't be bothered finding them. Not that I don't think you're special enough to bother for! I'm simply done for the day.

Overwhelmed .. again.

Yes.

I know.

The usual lead up to exam time.

Stressing to the max.

Wondering how I'm going to remember everything.

Feeling like I'm not prepared.

It only takes one wrong answer in a practise test, for me to believe that I'm going to fail.

My heart skips a beat every time I think about sitting these exams on Friday.

The problem with that is .. anything that I try to recap on now, gets lost in the splodgy (yes I made up that word) part of my brain.

It's possible that, at crisis point, some of that information will find itself where it should be .. on my answer sheet, in the correct position.

It's also possible, that it is lost forever, never to be found, never to see the light of day again, to spend eternity in the darkest annals of my grey matter.

Freaking me out!

Made Lamb Rack with roasted vegetables - sweet potato, zucchini, onion and tomato - for dinner.

It's almost 11pm and I now only have 4 days left to study and as usual, I am beginning to panic and wondering if I've done enough for both exams.

I Am Brilliant!

I understand Stoichiometry!

I can do stoichiometry calculations! AND come up with the correct answer!! AWESOME!

I was so excited, I was going to show you the problem and then show you all the steps to solving it, but lucky for you, I forgot to post here last night, and in the following 24 hours, I realised that you wouldn't find my calculations even the slightest bit exciting.

I hear you sigh with relief :)

So, I have been studying all day and aside from a great breakfast of bacon, eggs, mushrooms and tomato, I cooked a very disappointing dinner.

Productive Day

Not an ounce of study today and I only got half of yesterday's 'to-do' list done, but I still feel like I've been very productive and achieved quite a bit.

I finally bottled my kombucha and also made up a new batch to brew.



I riced up my 6 cauliflower and broccoli, bagged them and labelled them for freezing.


I invented a delicious tomato, vegetable and chilli sauce.



I cut up and boiled the pumpkin ready to make the dog food, which I'll do tomorrow morning.

I didn't get the sauerkraut started at all. Perhaps I'll get to that tomorrow too.

Scientifically Challenged

Just when you think you're starting to get the hang of things, they throw in a word like 'stoichiometry'.

It is "the relationship between the relative quantities of substances taking part in a reaction, or forming a compound, typically a ratio of whole integers".

I KNOW that you didn't read that whole sentence!

Some wonderful youtube users made some videos called "Stoichiometry For Dummies".

I KNOW those videos were made just for me and OMG what life savers they are!

Also today, I've learnt about balancing chemical equations.

I read the lesson pages, I watched the lesson slideshow, I downloaded the lecture, I checked the text book and I investigated the discussion forums to get some tips ... and still I had no idea, and just couldn't 'get' it.

Then I found youtube.

The first video explained it perfectly and it felt like I found that last piece of jigsaw that made all the rest of it make sense.

Thank goodness!

THEN I had to figure out how to convert grams to moles, grams to molecules, molar mass, atomic mass, molecular weight, formula mass or weight ... yeah I know ... more blah blah blah.

I'm still in the middle of that and by 4pm today, my brain was almost mush. My wild orange oil was all burnt away, so the brain decided it was time to shut down.

By the time I packed away all the fruit and veg from the two big FROG boxes that arrived today and cleared some space in the fridge by giving what didn't get used last week, to the chookies, I just didn't have it in me to do anything else.

I have 3 big cauliflowers and broccoli, so that I can make a big batch of cauli/broc rice and package them into meal sizes to freeze for the next week or two.

I have some fresh organic cabbage and beetroot, ready to make a big batch of sauerkraut or some kind of fermented food .. maybe kimchi?

I have the makings of another 2 week batch of dog food.

I have a batch of kombucha that has finished brewing and is ready for bottling.

I have the makings of a new batch of sriracha tomato sauce.

All of these things need to be done in the next few days while I also study for two exams and my heart has just skipped a beat as I typed this!

Adoring Husband has lovingly offered to take me out for lunch next week, but I don't think I'm going to have the time to spare for that. Every minute between now and next Friday is precious and accounted for.

I think this is most appropriate for my current situation ...

Focused

I'm focused without my focus essential oil!

I've powered through a lot of lessons today and passed all the practise tests, so it's been a very productive and satisfying day at my desk.

The wild orange oil has been burning and opening my mind to all that Chemistry nomenclature and the Periodic Table memorisation. Ok, you got me, I don't have to memorise the periodic table, but I had you going there for a second didn't I?

I didn't cook anything exciting today. Last night's leftovers for lunch and then a combination of the last two night's leftovers for dinner, served with crispy skinned salmon.

So, as you can see, I have nothing to report today and nothing to share.

Happy Study

Yessssss!

Finally, I sat at my desk and studied.

I've been studying on my laptop, on the couch, intermittently and when Adoring Husband was watching TV, it was quite distracting .. however, it was my choice to do it that way, so I only have myself to blame.

I have been avoiding my desk and my desktop iMac because that computer was running so slow that it frustrated the hell out of me!

For some unknown reason, something has happened in the last 3 months since I stopped using the iMac, and today, when I turned it on, it was running perfectly!

What a pleasure it was to study today!

As an added bonus, I used my oil burner to burn some 'wild orange' essential oil at the desk. Wild orange helps uplift mood and energy levels, so I stayed quite motivated for about six hours.

I'm waiting on a special blend of essential oils to come in the mail, which will help me focus. I have high hopes for that one! It should arrive some time in the next week. Hopefully before my exams!

I haven't used essential oils before.

I have used scented oils, which really just make the room smell pretty ... or toxic ... whichever way you want to look at it.

So I'm dipping my toes and testing the waters .. just another tier to the natural way of improving or maintaining good health. I haven't delved too far into it yet because I'm now cramming for two exams due in less than two weeks, but what I've looked at so far, is very interesting and I'm keen to learn more!

Anyway, I was just on my way to bed when I remembered I hadn't posted here yet, so now I'm off! It's midnight!

Unstructured

That's what my days are .. unstructured .. and I need to take a leaf out of Vegan Chickie's book and become more structured with my days. She DID give me a daily planner, so that I could organise my days in a more productive way .. but I am incapable of even organising my organiser!!

Today, I spent an hour at the Seat of Knowledge and planned on studying as soon as I arrived home, but I realised that Adoring Husband had to attend a meeting tonight and wouldn't be here for dinner, so instead of studying, I searched for recipes to cook for lunch as a main meal.

Then, I spent an hour cooking a leg of lamb with roasted vegetables and creamy garlic chard with a rich wine gravy.

I procrastinated for the afternoon and achieved absolutely nothing.

Adoring Husband found this little visitor in the back garden today and I wasted some time with the camera ... although, really, time with the camera is never wasted is it!?

Good Day Out

I spent the day with Mardi and Woman of Many Talents, listening to one of my favourite speakers, Jessie Reimers, telling us about essential oils and recipes for natural cleaning and personal products.

I could listen to her talk for hours, because her passion for health, nutrition and natural remedies matches mine, however, she is able to express herself more eloquently and her young mind stores her facts and figures in a much more organised and efficient manner, so that she can find and share more details than my poor old brain can muster at any given time.

The fact that she is high functioning Aspergers probably helps :)

I've ordered a kit of essential oils and can't wait to receive them in the mail and begin creating concoctions, bringing forth my 'inner witch'!! So much research to do and more books to find and recipes to discover! Yet another step towards our goal of overall positive health .. physical, mental and emotional.

I'm excited that Woman of Many Talents is now coming to the Paleo Way event in Bundaberg with us at the end of this month! We now have a full car with Ms Apple coming along too. Adoring Husband won't know what to do with himself being surrounded by so many smart, witty, beautiful women!!

Tonight, I made a turkey mince meatloaf coated with sriracha sauce and for the last 15 minutes in the oven I tossed pine nuts over the top to roast. I did some more chilli veggie cakes and served dinner with a salad of lettuce, baby spinach, cucumber, tomato, avocado and pear all drizzled with balsamic vinegar.

Incredibly delicious, especially with a nice addition of chilli powder in the meatloaf and veggie cakes.

We've watched a brilliant one day cricket match between Australia and Sri Lanka in the World Cup today, switching every so often between that and various NRL football matches. The cricket match isn't finished yet and it's going to be very close.

This month's flickr challenge is 'light'. The photo has to be taken 'in' or 'of' any light except sunlight. So that means no sunrises or sunsets. It can be moonlight (even though moonlight is actually the sunlight reflecting on the moon lol), artificial light, streetlights, candle light, starlight, flash light etc.

It will be interesting to see the different ideas that everybody comes up with.

Adoring Husband arrived home safe n sound from his SES training weekend, tired and satisfied.

All is right with our world and it's back to study tomorrow.

Low Energy

My energy levels have felt very low today. Perhaps I had one too many glasses of wine last night?

I woke up early so that I could do Adoring Husband's work for him while he's away at training and then I had a big breakfast of bacon, eggs, tomato, onion and avocado, attempting to gain some energy, which only lasted til lunch time and then I simply needed to nap.

I napped comfortably for almost 2 hours. Five minutes after I woke up I received a phone call from my happy little Chicklet who told me all about her adventure at Aussie World a couple of days ago. They were the only family there so Chicklet had all the rides to herself! I love listening to her talk .. she hardly takes a breath sometimes .. other times she forgets what she started to tell me and loses track lol. So precious.





 
Finally, I made myself a delicious and healthy dinner tonight. Zucchini pasta with avocado, lemon & basil sauce and crispy skinned salmon.


It was delicious, but I couldn't eat all of the salmon.

It's now 10pm and I'm off to bed. I have a big day tomorrow attending the 'Wellness Day' in Hervey Bay.

Beef Vindaloo in the slow cooker for dinner tonight. I've never made it before, nor have I ordered it in a restaurant, but I do know that Number One Son likes it.

Adoring Husband seemed to enjoy it and ate a huge bowl of it with a side of papadums. I'm not sure how I feel about it. I think the flavour is a little strong for my liking and I don't think I'll make it again .. unless Number One Son comes to visit.

Yay for the footy season! Tonight's first game is between my team, the Broncos and last year's Grand Final Champions, the Rabbitohs. Almost at half time and the Rabbitohs are winning 8-2.  Football season has been a long time coming!

I didn't get much study done today, even after my early night last night. I seem to have hit a wall and I need to figure out how to climb over it! I'll have a long weekend to focus while AH is on some training, so let's see how I go with that.

AH picked up our FROG box today which was full of celery, chard, silverbeet, spinach, kale, lettuce, onions, tomatoes, carrots, beetroot, cucumber, zucchini, plums and grapes. What a haul!

So the fridge is chockers right now!  I need to check out some paleo recipes for the abundant green leafy vegetables that I have. All of my old recipes have cheeses and pastries in them, which aren't paleo.

I'm certain that 'Pinterest' will provide me with some ideas. I do love 'Pinterest' for recipes because I can ALWAYS find just want I'm looking for when I do a search.

So as I sit here eating organic purple seedless grapes watching the footy, I bid you farewell.

Tonight for dinner I dipped some boneless chicken thighs in egg and then coated them with a mixture of almond meal, LSA, sesame seeds, chilli powder, onion powder, salt and pepper. I lay them on a tray lined with baking paper which was brushed with coconut oil and baked them in the oven for 20 mins, then turned them over and baked for a further 15 mins.

They were scrumptious and on another tray in the oven I roasted sweet potato, beetroot, onion and zucchini and then I placed 2 large flat mushrooms on the tray with chopped garlic and butter in their centres. I drizzled some balsamic vinegar over the vegetables after I served them up and added a little container of my sriracha sauce to dip the chicken into.

It was GOOD!!

My/Our Story

Mid last year my husband become unwell and was sent off to see various specialists who sent him for numerous tests. The results were unclear, but that didn't stop them (Drs) from stocking him up on all types of medications. One specialist told him he may have to remove a piece of his large intestine. That was it for me, I decided that there had to be a better way. So I started researching, I came across the word "Paleo" and read everything I could find on Paleo. Everything I read just made sense. I found Chef Pete Evans face book page and purchased his book 'Family Food'. We ate 80% Paleo as we patiently awaited The Paleo Way 10 week Program to start. Since starting Paleo I have disposed of 16kgs and my husband 15Kgs. Little did I know that the Paleo way would not only change my husband's life but mine also.  I have struggled with digestive issues my whole adult life and was living in constant pain, I had just accepted this as being part of my (normal) life. WELL I could shout from the roof top .. its not a normal way of life! My pain is nearly non existent now, I no longer take any medications for my stomach or my sinus (which I have had for years). My husband and I are also enjoying clearer skin, more energy, weight reduction, brighter eyes, we are less hungry and the list of improvements just keep coming, but best of all is we cant stop smiling. The Paleo Way is a life changer and we will NOT be going back to the old way of life. Give it a go, you wont be disappointed... A huge thanks to Pete and his team, you guys have helped give my husband and I our quality of life back xx

I got some more study done. I didn't enjoy it at all today! I struggled and was easily distracted, but I didn't give up completely, so I feel like I achieved something .. not a lot, but enough.

I was also, strangely enough, craving coffee!! Almost all day!! Very weird. Needless to say, I did not cave to my crave :) tempting though it was.

Perhaps an early night is on the cards. My brain will function better after a solid night's sleep. Last night, I stayed up til midnight watching Grey's Anatomy .. when will I learn???

Love my girls

Yes, I do love my daughters very much. They make me so proud and are both more wonderful than I ever imagined they would be.

But, I'm talking about my other girls.

My Tuesday morning tea girls. My Friday night at the club girls. My once a month barbecue at the park girls. My every so often at the movies girls.

Today we went to the movies and saw "The Second Best Exotic Marigold Hotel".

We loved it so much!!

Apparently, it got very bad ratings from the critics ... like 2 stars out of 5. We can't figure out why.

I think it was as good as, if not better, than the original.

All of the original cast were back with a couple of extras .. including the very charismatic Richard Gere.

The movie was funny, moving, dramatic, uplifting, warm and reflective.

We thoroughly enjoyed it and highly recommend it to anyone out there considering going to the cinema to watch it .. definitely worth seeing on the big screen, even if only for the glorious colours, scenery and energy that flows from the screen to the audience.

Just a couple of hours after we arrived home, we all gathered again at the Lion's Park for our monthly barbecue. There were about 17 of us there this evening. The weather was mild. The mood was happy and friendly. The variety of food was wonderful and delicious. We all had a great time.

I'm a studying cook.

I sat down to study at about 9.30am but my brain just couldn't focus, so I went to the kitchen and cooked up a big feed of bacon, eggs, tomato, onions and avocado. That did the trick.

I studied til lunch time, when Adoring Husband arrived home from the SES, so I threw some beef sausages in the oven and while they cooked I chopped up a bowl full of salsa with tomato, capsicum, onion, avocado, cucumber and pear. A pinch of salt and pepper and a squeeze of lime juice to finish it off.

I continued studying til 4.30pm and then it was Chilli Mince with vegetable cakes, which were so delicious!

For the veggie cakes, I riced half a cauliflower, grated 2 cups of sweet potato, finely diced an onion, chopped one bacon rasher, sprinkles of paprika, cumin, chilli powder, turmeric, salt and pepper, 1/4 cup chick pea flour, a handful of chopped fresh flat leaf parsley, a good splash of coconut oil and 3 eggs. I used egg rings to mould them into shape on a large flat tray lined with baking paper brushed with coconut oil, and cooked them in the oven for 40 minutes.

I had two servings of both the chilli mince and the veggie cakes! The servings were only the size of a bread and butter plate, but I couldn't resist. There are heaps left over, so I'll serve them with guacamole tomorrow. Yum.

Tomorrow morning I'm off to the movies with the girls. It will be a nice break from my studies. A bit of light relief. I'm looking forward to it.

I Think You Know ..

Meanwhile, yesterday was my final chance to create a photo for the flickr challenge 'Nostalgia'. So, as the sun was setting, I gathered as much stuff as I could find in the house and shed, that was old, or could be considered nostalgic.

It took me two hours to finally come up with this...


It's pretty amazing how much 'old' stuff you can find in your own home! The camera is a Raven from the 1940s. The canister of film would be from around 1950s and Ginger Rogers/Fred Astaire were big in the 1930s and 1940s.

I did a photo quite similar to this for my exhibit a couple of years ago.

It was nice to play with the camera for a while. I miss my photography. Studies have taken over my precious time. I might have to take a few days between semesters and get out and about with the camera for some fun!

Adoring Husband arrived home safe n sound after his big chainsaw course .. although the heavy physical work in the heat, has taken it's toll and his body (mainly his legs and hands) has been cramping up so badly that he had to stop a few times on his way home.

A hot shower followed my some magnesium oil massaged into his legs. A hearty meal full of good himalayan salt (for it's minerals) and plenty of spices, green vegetables and good fats, then topped off with a bottle of water in which a hefty swig of apple cider vinegar was diluted.

It will now be interesting to see if he sleeps through the night without cramping up.
